Launching Casa Adela five years ago was tough. Since then, I’ve played it safe, putting conservative bets ahead of creativity. But if we fail to push ourselves, we fail to grow. Next week we introduce Restaurant Diego and Casa Alondra to the magical city of Morelia, and it has already become the most fulfilling project of my life.
