Great conversations at the annual Flavor and Extract Manufacturers Association's Annual Leadership Conference on the challenges around so-called "Ultraprocessed Foods" and the NOVA food classification system. Big "THANK YOU" to Julie Hess, PhD and Madeline Comeau from the USDA Grand Forks Human Nutrition Research Center for sharing their expertise on this important topic. Based on consumption data, unfortunately, consumers' diets continue to be misaligned with Dietary Guidelines. It appears that one of the main reasons for consumers not following these Guidelines is that healthier food offerings often don't resonate with consumers' taste buds. To me, a major unlock to resolve this issue could be to make healthier foods tastier through the addition of flavors. In other words, I feel that making healthier food the preferred choice through great taste could make a significant positive impact on mitigating nutrient deficiencies. Unfortunately, the NOVA classification makes foods containing flavors "look bad" and subsequently defeats its purpose of leading consumers towards healthier diets. Moving from punitive to positive. Nutrition labelling, like those below, is largely following the punitive tobacco and alcohol playbook and it shouldn't. We can all indulge in foods high in sugar, salt, or fat sometimes. In small, irregular quantitates these foods can be part of a healthy diet. BUT, what we as a population across the globe are not doing enough is getting enough of the right, nutrient dense foods often enough. Labelling could try and emphasise the nutrition positive. What if the front of pack showed how much of the best nutrient dense foods were contained in the product, for example: - Whole grains - Leafy greens - Legumes - Seeds + Nuts - Berries This would have to be contextualised by country/culture but would turn the debate about food towards one that is focused on what you SHOULD eat versus what you SHOULD NOT. The classification of this kind of foods has sparked a debate, with concerns about its clarity and the need for scientific consensus. The NOVA classification system, the framework at the core of this concept, has faced criticism from experts in food science and technology. One primary concern is the system's failure to account for the diversity of nutritional profiles within a category, potentially misrepresenting the healthiness of some foods. Experts point out contradictions and inconsistencies, challenging the notion that all foods in the same category are equally unhealthy. When assessing the healthiness of food products, a balanced approach is necessary. It is not just about the number of processes or ingredients, but more about what are those ingredients, and their amounts. Consider nutritional content, ingredient quality and processing level. Rely on scientific evidence and adhere to regulatory standards. A nuanced perspective is key to making healthier, well-informed food choices. Avoid oversimplification and misinformation. Instead of just seeking "natural" foods, prioritise those with good nutritional profiles, characterised by high levels of essential nutrients such as vitamins, minerals, fiber, and lean proteins, while minimising excessive amounts of saturated fats, cholesterol, added sugars and sodium. #nutrition #health #ultraprocessedfood
