I started on my health journey nearly 20 years ago. The first of 4 surgeries in 2 years led me to the belief I needed to change my lifestyle or face untoward consequences. So, I did but I have grown and learned infinitely more since engaging in a career in medicine. Audrey has been the major catalyst in my growth. Her knowledge of cooking and knowledge of healthy foods has been the key ingredient. Her love has driven this. Fast forward to the Mediterranean Spicy Lentil recipe. We have made different concoctions in the past but this has emerged as my favorite and I eat it every work day; have for many years. It tastes great, it’s super healthy, and it’s cheap. We shop at Walmart. We spend 3-4hours or so on food prep every 3 months and another half hour of packaging; completely worth it. But now I have food for 8-10 weeks and the cost per ounce is minimal as the ingredients are onions, celery, carrots, mushrooms, garlic and the lentils; the spices and flavoring are the highest costs. Moreover, I hear from patients about excessive gas. Well, aside from the lack of maturity with this discussion, your gas smell will actually improve with a better diet believe it or not. Beans are critical in achieving optimal blood glucose levels in the body outside of the obvious benefits of protein and fiber. Health and nutrition is paramount to a healthy life. It would be criminal for me to have this knowledge and not to exact its full potential. I can’t overstate enough the importance of Audrey Thurman’s patience and help in all of this but here’s the recipe; we modify but the general idea is there. Enjoy!
