McDonalds’ can spin out CosMc’s – but you’re still just eating burgers and fries. Similarly, Marriott, Hilton, and Hyatt know that travelers don’t want the sameness that’s core to the DNA of their companies. They try to convince travelers (and owners) that many of these new brands are “independent” – but they’re not. They’re just another form of franchise brand, that come with 250-page operational handbooks, strict rules on how employees must act, and a guest experience that’s designed in a basement lab at Marriott or Hilton headquarters.   At the end of the day, just the same burgers and fries. #marriott #hyatt #hilton #hotelmanagement #hospitalityindustry

“Setting the Table”, author Danny Meyer ‘Setting the Table’ is Danny Meyers' guide to the world of hospitality. Mr. Meyer is the CEO of Union Square Hospitality Group (USHG) and has decades of experience as a restaurateur in New York City. Working in arguably one of the most competitive environments for restaurants, Danny Meyer has managed to make a name for himself, synonymous with good hospitality and impeccable quality. His book, ‘Setting the Table’ gives us insight into his philosophy on hospitality. What stuck with me the most is his philosophy: treat people well enough that they keep coming back for more. But, how do we go about treating people well? There are endless kind people in the world, but that doesn’t guarantee they all succeed. This is what I learned from Meyer as he teaches through stories of his own experience. Explaining the ins-and-outs of key moments in his business, instances of personal doubt and pivotal milestones. It’s harder than it looks but when done well, it looks effortless. One question that came from the audience, including me, was this: what’s the most important item missed by restaurateurs during an opening? A hot dog? 🌭 Yes, that’s right—a hot dog! That’s what it took for restaurateur Will Guidara to dazzle some visiting clients who were fine dining at his four-star, award-winning restaurant, Eleven Madison Park, in New York City. According to the hospitality mogul, his success was the result of dedication, hard work, and attentive listening to his customers. He penned the concept of ‘Unreasonable Hospitality’, a philosophy based on transforming ordinary transactions into extraordinary experiences. He highlights 3 key points for achieving success when serving people: 1. Be present. Care about what you are doing. Listen to what people are saying and not saying. 2. Take what you do seriously, without taking yourself too seriously. 3. Give people a sense of genuine belonging: ‘One size fits one’. Don’t treat people like a commodity. According to Will, we live in a service economy. This means that making good products is just not enough. We are proud to be a member of the Hospitality Task Force with key industry partners, BC Restaurant & Foodservices Association (BCRFA) Alliance of Beverage Licensees (ABLE BC) Restaurants Canada BC Craft Brewers Guild and British Columbia Hotel Association Rising Tide Consultants has been advocating to the city on the following key issues, and we are pleased to see that they will be reviewed by Council on December 13, 2023. You can attend this meeting at Vancouver City Hall in person or participate remotely if you want your voice to be heard on these important topics. The key recommendations we support are: • The elimination of the existing licensing moratoriums within areas of Vancouver, such as Granville Street. We are very happy to say that Vancouver City Council has already approved the new ‘Rec Room’ concept for Cineplex coming in the fall of 2024, which was a big win already for Granville Street as a signal to end the moratorium. • The elimination of the distancing of licensed establishments and the different classes of license policies. • The licensing of retail businesses with liquor primary licenses, such as Spas, Beauty Salons and Retail Stores. • Giving the Chief License Inspector more authority to make decisions without having to obtain approval from Council in advance of action to expedite license applications. It is our hope that there will be positive outcomes for the benefit of hospitality as a result of this meeting, and we will keep you informed as we learn more.
