FOOD SAFETY- ALLERGEN. Bakery business fined for failure to label allergens on carrot cake leaving woman hospitalised. MM Home Bakery Ltd received fines totalling £1,750 for the offences which came before Banbridge Magistrates’ Court sitting in Newry. The case against the company was brought by Armagh City, Banbridge & Craigavon Borough Council after a woman purchased the cake in the borough in March 2023, and immediately suffered an allergic reaction and was taken to the A&E unit in hospital for treatment. The court heard that the business had changed the recipe of the cake to contain peanuts in 2021 but had not changed their label and continued to sell the mislabelled cake for two years. This is really basic food safety and is almost incredulous that this could happen. Food allergies have the potential to cause great harm. Food Business Operates need to take appropriate precaution to ensure their products are properly labelled. This allows consumers to make an informed choice. Luckily, the customer survived in this case. And a another tragic death was narrowly avoided. I think the level are fine certainly does not act as a deterrent. Why Fish as an Allergen is Considered a Chemical Hazard ? In the context of food safety, understanding the categorization of hazards is essential. One such area of concern is the classification of fish as a chemical hazard in the context of allergens. This classification is essential for understanding and managing the risks associated with fish consumption for individuals with fish allergies. Fish as an allergen is considered a chemical hazard, particularly for those with allergies, due to the specific way our bodies react to certain proteins found in fish. These proteins, mainly called parvalbumins, are robust and do not easily break down, even when the fish is cooked. When someone allergic to fish consumes these proteins, their body mistakenly identifies these proteins as harmful, triggering the immune system to combat these proteins, causing allergic reactions. This allergic reaction involves numerous chemical compounds. For instance, the immune system produces antibodies (known as IgE) that specifically target these fish proteins. Upon subsequent consumption of fish, these antibodies quickly recognise the proteins and initiate a chain of reactions. A significant reaction includes the release of histamine, a chemical that can lead to symptoms such as swelling, itching, or more severe reactions like anaphylaxis. Therefore, classification of fish as a chemical hazard is due to these chemical reactions in the body, not because the fish itself is a chemical substance. This is distinct from biological hazards, like bacteria or viruses, that can also cause health issues. Therefore, the classification of fish as a chemical hazard in the context of allergens is based on the chemical nature of the immune response it triggers, rather than the biological nature of fish as an organism. This distinction is crucial for food safety and public health, as it guides the management and regulatory approaches to handling fish in the food industry, emphasizing the need for careful handling, allergen management, and clear labelling to mitigate allergic reactions. As we look into the scientific aspects of food allergens, our role in ensuring food safety and protecting public health becomes even more significant.
