We met with our talented and passionate Distiller Paul Burnett, to get a behind the scenes glimpse at what goes into making our award winning Gin and here's what he had to say: Have you always wanted to be a distiller? I always wanted to make brandy and then the opportunity to join 23rd Street came up. I was never going to squander an amazing chance to become a distiller. It’s been an amazing journey thus far and every day has been challenging and very rewarding. What does a typical day at work look like for you? The most important part is running the 3 pot stills we have onsite. Tasting and making the “cuts” to the spirit coming out of the distillation process is critical to our quality. Depending on the style of product we are making and the intended end product, determines what separation we do through the stills. Lots of tasting and assessment of blends. Looking at the analysis of the different spirits we create each day. Identifying what barrels the spirits will be transferred to for maturation if it’s one of our brandies, rums or whiskies. If I can, I like to talk to our customers in the visitor Centre and see what has attracted them to our site. What is your favourite gin and why? I really like the Quattro Gin. It’s perfect for creating Martini’s, very flexible in cocktails or on ice. It’s the most flavoursome of the gins from my experience. How do you drink your gin? I make Martini’s normally as I’m such a huge fan of premium Vermouth to be paired with OUR exceptional gin. Any tips for pairing gin with food? In 2023 the demand for 𝐈𝐭𝐚𝐥𝐢𝐚𝐧 𝐫𝐞𝐝 𝐰𝐢𝐧𝐞𝐬 in the US was quite high and this autumn season the trend continues. The wines most in demand right now are those made from Sangiovese, Montepulciano, Barbera and Nebbiolo grapes. High-alcohol wines that'll leave you feeling tipsy 1️⃣Sherry or Port: Sherry from Spain (16 to 18 percent ABV) and Port from Portugal (20 to 22 percent ABV) are both fortified wines- which means that winemakers add extra alcohol to the wines during the winemaking process. 2️⃣Amarone Della Valpolicella: This Italian wine containing 16 to 17 percent alcohol is made by drying the grapes to increase their sugar content, as a result of which, they produce more alcohol during the process of fermentation. 3️⃣Zinfandel from California or Shiraz from Australia: Regions of California and Australia that produce Zinfandel and Shiraz, respectively, have a hot and sunny climate, which causes grapes to ripen fully, due to which the wines have close to 15 percent alcohol by volume. Here's a pro tip- Always sip on water between your sips of wine to avoid dehydration or hangover. Remember to practice moderation so that enjoy your drink responsibly. I'm waiting for the Japanese RTD's to invade with their 25 proof contents supercharged with CO2 for maximum absorption as quick as possible so grandma's swinging from the straps after her first can. The advice on cranberry juice is off. You cannot mix consistently with it if it's sweetened with corn syrup. You can if it's sweetened with sugar. The cost increase is about $1/bottle for that performative consistency. You can also skip the sugar and crush your own. Unsweetened, a little goes a long way. Rendered as an unsweetened mash it makes an excellent rinse for clear liquors to provide cranberry pink color and light cranberry citrus-y notes and the mash can be tossed after the rinse. This tends to wow gin and dessert drinkers who assume the color is grenadine. I think we've reached peak pricey booze as I'm seeing a lot of quality hooch being move to off-brand mass consumers who would rather spend $25 vs. $100/bottle and there's just tsunamis of the stuff reaching maturity. Few distilleries are faced with a Kirin problem of killing brands because the quality blends they used to make are no longer possible with their depleted aged stocks.
