A giant project - four months of research and a month-and-a-half of writing and editing - went live today! For our annual February bar issue at Chicago magazine, I selected the 20 best cocktails in town. We have forward-thinking Mai Tais, dialed-in old fashioneds, a perfected Bloody Mary, and more. When I began putting this list together, I had to have some criteria - first and foremost, the drinks had to taste great, but they also had to be available for awhile. So many menus change seasonally these days, so I wasn’t able to include something that would be swiftly removed. Because of that, much of this list ended up being what we could also call the “new Chicago classics,” drinks that have endured for years. I was surprised by how many picks have been on menus since day one, like the top drink, Queen Mary Tavern's impeccable Navy-Strength Old Fashioned, which I get every time I stop by. Of course, any list like this is a reflection of my personal tastes (I’m sorry there are no espresso martinis or spicy margs!), but I strove to find balance in spirits and styles. Call me Old Fashioned 🥃 The Old Fashioned was first referenced around 1806, but it wasn’t the Old Fashioned as we know it today. In fact, an Old Fashioned was the first name people started calling cocktails, and it referenced a style of mixology. (Yes, in 1806, there was still mixology.) These Old Fashioned recipes included all types of spirits from gin to mezcal, much like the Old Fashioned fusions of today. This was the case into the 1860’s when it became even more common for people to order bitters, water and sugar with their favorite spirit of choice. The drink actually originated in Louisville, Kentucky in 1880 at a private social club called The Pendennis Club, by a bartender at that club in honor of Colonel James E. Pepper, a prominent bourbon distiller, who brought it to the Waldorf-Astoria Hotel bar in New York City. The first whiskey old fashioned recipe was printed in 1895 in Modern American Drinks by George Kappeler. His recipe instructs the reader to dissolve a lump of sugar in water, add two dashes of bitters, a piece of ice, lemon-peel and one jigger whiskey. The concoction should be made in a whiskey glass, mixed with a small bar-spoon and served with the spoon still in the glass. In 2015 Louisville declared the Old Fashioned its official cocktail, and even celebrates the popular drink with a two week event called the Old Fashioned Fortnight every June. Ingredients: Bourbon whiskey: 60 ml or 2 oz, demerara sugar or brown sugar: 1 cube or 1 sachet, Angostura bitters : 2 to 3 drops, Method: stirred. Glassware: old fashioned. 🥃Tomorrow is National Bourbon Day! Plan accordingly and celebrate it with a New York Sour, this sophisticated cocktail that combines fruity red wine and smoky-sweet bourbon. Just like our approach at Claret, where we blend innovation with tradition, this cocktail embodies the art of balance and refinement. Ingredients: - 1/4 cup (2 ounces) bourbon - 2 tablespoons (1 ounce) fresh lemon juice (from 1 lemon) - 1 tablespoon (1/2 ounce) simple syrup - 2 tablespoons (1 ounce) fruity red wine - 1 strip lemon zest Directions: Fill a cocktail shaker with ice. Add bourbon, lemon juice, and simple syrup; seal lid on shaker and shake until chilled and frost forms on shaker, about 15 seconds. Strain into a rocks glass filled with large ice cubes. Gently and slowly, pour wine over the back of a spoon held just above the cocktail's surface, letting the wine float at top of the glass. Pinch lemon peel over the cocktail and run it around the rim of the glass; add peel to glass as a garnish. Serve immediately.
