THE MYSTERY OF THE GREEN BLUE MIST We “Scott’s have been eating oatmeal longer than any of us care to remember. If you’ve grown up in a Scottish family, your “Da” would have regaled you with his stories of how thick and dense the top portion of the oatmeal a day later while sitting in the refrigerator had become. Some even said, “if left alone, after a few more days, it could be used as mortar”. A slight exaggeration for sure, point taken, oatmeal or steel cut-outs can be really “stodgy.” (heavy or filling). Recently, my wife and I noticed a greenish-blue mist on top of the cooking steel-cooked oats. “WHAT’S THAT”? I asked. “What’s what”, she inquired. “That greenish blue mist”, says I. “Oh that, not sure, weird though, don’t you think?” “Sure do! I’ll investigate this great mystery” So, here we are. So, why is there a greenish-blue mist on my steel-cut oats? Here are some possible reasons. 1. Chemical Reactions with Cookware: Sometimes, cooking acidic foods in certain metals like copper or cast iron can cause a color change due to a chemical reaction. However, steel-cut oats aren't particularly acidic, so this seems less likely unless something acidic was added to the pot. 2. Mineral Content in Water: High mineral content in water, especially copper, can sometimes cause color changes when heated or when reacting with certain foods. 3. Additives or Contaminants: If there are any additives or contaminants either in the oats or in any ingredients you added (like water), they could react when heated to produce colored compounds. 4. Optical Illusion or Lighting Conditions: It's possible that the conditions in the room or the lighting might have created an optical effect making it seem like there was a green-blue mist. 5. Mold or Fungal Contamination: This seems less likely, but certain molds or fungi might produce colorful compounds when heated. Always ensure your food items are fresh and properly stored.
