At IFS, we don’t let leftover potatoes go to waste! Chef and Catering Instructor Ryan transforms them into a hearty potato soup that's both delicious and filling. Follow these simple steps to make potato soup from your leftovers. 1. Cook bacon pieces until crispy, then set it aside. 2. In the same pot, sauté onions and garlic until soft. 3. Add flour and stir for a minute 4. Add chicken stock, milk, and add potatoes. 5. Simmer until potatoes are at desired softness, stirring occasionally. Blend. 6. Season to taste with salt and pepper. 7. Finish with cheese, yogurt (or sour cream), and bacon bits. 🥔 Use vegetable stock and leave out the bacon for a vegetarian soup. 🦊 Belton Farm Red Fox cheese is an incredibly unique and delicious addition to these bacon, fig toasties! Make your sandwich today - chili pepper jelly optional for a kick. Ingredients: 6 strips cooked bacon 4 thick slices sourdough bread 6oz Belton Farm Red Fox cheddar, sliced 4 figs, sliced 2 Tbsp butter, softened 2 Tbsp chili pepper jelly, optional Instructions: Heat a large skillet to medium high and cook bacon for 2-3 minutes on each side, or until cooked and crisp. Remove bacon and set aside. Reserve bacon drippings. Spread red pepper jam on 2 slices bread and top with cheese, bacon, and figs. Top with 2 remaining slices of bread. Spread butter evenly on each outside slice. Heat the skillet with bacon drippings to medium and add the toasties. Cook on each side 1-2 minutes, or until golden brown and the cheese is melted. 🍽 A delicious (& easy) winter recipe: Slow Cooker Beef and Broccoli! I used chuck roast for this, but use whichever beef you prefer… 1. Begin by slicing the beef into 1-inch pieces. 2. In a bowl, whisk together soy sauce, beef broth, dark brown sugar, and minced garlic. 3. Place the sliced beef into the crockpot, followed by pouring the marinade over the meat. Cook on low for 6 hours 4. Add chopped broccoli during the last 30 minutes. 5. Remove 1/2 cup of the liquid from the crockpot. Whisk in 1 tsp of corn starch until smooth, then add it back into the crockpot. Allow it to simmer and thicken for an additional 5-10 minutes. #CrockpotMeals #WinterRecipes

Eggplant Parmesan for dinner tonight turned out delicious. For the first time I sliced the eggplant lengthwise, and I really liked how that turned out. Thinner individual slices, and the stack was also shorter. Did not have regular marinara sauce, so I used Rao’s pizza sauce, and it was delicious. It is really good quality. One of the most important steps is “sweating the eggplant” for about 30 minutes before you start preparing the slices with egg and breadcrumbs. This involves slicing it, adding a little kosher salt, and stacking it with a heavier plate on top to press down. This makes the bitter juice drain out and really improves the flavor. The weather's been a bit mixed over the last couple of days. When it's nice to have a salad in the summer, if the weather is cool, it's also good to have something warm to eat. Combine the two with a warm salad. This one uses black pudding, but roast chicken, warmed smoked mackerel, green beans, broccoli, toasted nuts or seeds are also delicious. The options are endless. Potato and Bacon Soup! This recipe is a classic winter dish with a twist of bacon. INGREDIENTS: Serves 6 6 thick slices bacon 1 ½ tsp olive oil ½ c chopped onion ½ c chopped carrots 1 stalk celery, chopped 4 c low-fat, low-sodium chicken broth 4 c cubed potatoes ⅛ tsp cayenne pepper ½ c shredded Cheddar cheese ½ tsp kosher salt INSTRUCTIONS: Cook the bacon in a saucepan over medium-high heat, turning occasionally, until evenly browned and crisp, about 10 minutes. Drain on a paper towel-lined plate. Discard bacon grease and wipe the pan thoroughly with a paper towel. Then, heat the olive oil in the same saucepan over medium heat. Sauté onion, carrots, and celery in hot oil until onion is soft but not brown, 3 to 4 minutes. Stir in broth, potatoes, and cayenne pepper; bring to a boil, reduce heat, and simmer, covered, until potatoes are tender, 10 to 15 minutes. Stir in cheese, heating just until melted; do not boil. Chop bacon and add to soup. Season with salt and serve hot. Enjoy this warm soup!

Recipe ⬇️ Follow ➡️ greenmountaingrills / your_behind_bbq_ (IG) Ingredients: • 1 pack boneless skinless chicken thighs • 1 pack bacon • 1 ranch seasoning packet • Your Behind BBQ Green Chile Bacon Rub • Roasted green chiles • American cheese • Slider buns Instructions: 1. Season chicken thighs with the Green Chile Bacon Rub and ranch seasoning. Let it marinate for 15 minutes to soak up all that flavor. 2. Preheat your Green Mountain Grill to 300°F. 3. Grill the chicken until it’s nearly done. Meanwhile, crisp up that bacon to perfection. 4. When chicken reaches 155°F, top each thigh with a roasted green chile, a slice of bacon, and a slice of American cheese. Keep it on the grill until the internal temp hits 165-170°F. 5. Remove chicken from the grill and let it rest for those juices to settle. 6. Toss those slider buns on the grill to get them toasted and smoky. 7. Assemble your sliders: chicken, bacon, and chile cheese goodness between those smoky buns. There are lots of different forms of broccoli in the supermarket just now, from your standard heads of broccoli to tender stem and purple sprouting. They are all delicious and equally nutritious. My Dad was a farmer and grew fields of broccoli when it was a new and unknown vegetable called calabrese. As kids we were fed it very regularly in large quantities. It's not just the head of the broccoli that can be eaten, the stalk is delicious too, it has the taste & texture similar to asparagus. If you think the skin on the stalk is a bit tough, just peel the bottom 2cms off with a potato peeler. 3 ways with broccoli other than as a vegetable... 1. Grate the stalk into a salad 2. Cut tiny florets of broccoli, mix with spring onion, toasted seeds and a little French Dressing for a tasty alternative to coleslaw. 3. Add to stir fries, pasta sauce & quiche.
