The weather turned for the better for yesterday morning's CMAA golf outing. Joe, Grant and the team did an amazing job pulling everything together. I wish I had time to grab more pics!
I had some fun with our new laser engraver to make the station labels and menus for the statios and buffets. A small touch that really ended up pulling everything together.

Mondays event was truly one of the best outings I have attended. Unfortunately I did not have a chance to thank you in person but we passed on high praise to each team member we spoke with! From the execution of all the on course dining to the in house engraved wood buffet markers, everything was exceptional. Thank you for having such a great team, CCV is a special place!
I am beyond proud to announce that our team has broken the record for monthly food sales, hitting the $1 million mark not just once but for two consecutive months!
A few years ago, for the first time ever, we broke a million in total F&B sales in a month. That was a fantastic feat, but achieving this milestone, for food alone, two months in a row has truly exceeded all my expectations. This incredible achievement is a testament to our culinary team’s hard work, dedication, and talent. If there is a sign that our members appreciate what we do, I cannot think of a better one.
To celebrate this success, I created a custom logo and used the Club’s laser engraver to personalize a set of custom knives for my Executive Sous Chefs, Chef de Cuisines, and Sous Chefs as a token of my and the Club’s appreciation.
Thank you to my entire team for contributing to this record-breaking success. Your commitment to excellence and teamwork is truly inspiring. Here’s to many more milestones together!
While this event was technically my Chef's Table, I must admit that it only came together as beautifully as it did because of the advanced preparations by Executive Sous Chef Nicholas Drew and Banquet Sous Chef Anastasia Rohland. You see, I Made the crucial mistake of scheduling this event the day before the fam's annual Beach trip. Needless to say, I got weeded tieing up business before this special dinner for some amazingly supportive members and their guests. Nicholas and Anna's dedication and skill set ensured everything ran smoothly, and that the event was as gorgeous as any I would have headed from start to finish. Your hard work and commitment to excellence are genuinely appreciated.
I am incredibly fortunate to have such talented and reliable team members like them. Their ability to step up and deliver exceptional results is a testament to our team's success. Thank you both!

I love new member orientation! It is our only chance for a great first impression and the perfect opportunity to flex the culinary muscle of the team. Taking the time to be on the floor, working the carving board tonight, allows me to properly introduce myself and ensure our new members that we are not only here to serve them great food, but also an amazing experience. Every member of the banquet team, both front and back of house, did an amazing job tonight doing just that, creating an experience that our new members will remember for a years to come.
