WHAT IS A TAHONA PRESS? During the extraction process, once the agaves have been cooked, they separate it into two parts. The first passes through a mechanical mill that separates the fibers. The second will be milled under a traditional Tahona wheel that rolls as it spins through a circular trough, separating the sweet juice from the pulp. Afterwards all the fibers are sent back to a custom made mill in which they can extract the rest of the juice and, finally, the juice goes onto the fermentation process in which they use some of the fibers. Did you know that the wood used for wine barrels is not harvested from oak trees growing in South Africa? As this fallen oak tree in Stellenbosch shows, the wood from these trees is too porous for barrels. Instead, the wood for wine barrels is imported from France, North America, and Romania. South African oak trees are primarily of the Quercus robur species, introduced from Holland by Van Riebeeck in 1656. Interestingly, the bark of these trees has long been used for tanning leather, containing tannin that has been used since Roman times. Wine barrels add a range of flavors, colors, and aromas to wine. Did you know that the largest wine barrel in the world is in Heidelberg Tun and holds 225,000 liters of wine? On a side note, in South Africa, an oak is also a term used to refer to a male person, usually a stranger.
