Department Marketing Statement

Housing, Dining & Auxiliary Enterprises houses 10,000 students, faculty and family residents on campus, provides support services for 9,300 students residing in the communities adjacent to the campus, serves 21,000 customers daily in its retail and board dining programs, manages the UCSB Campus Store and University Center, hosts 150,000 guests annually for conferences and meetings, manages a major events center (Events Center), and oversees the administration of transportation, parking and fleet services. Additional responsibilities in the HDAE portfolio include Administrative & Residential Information Technology (ARIT) and The Club & Guest House. Brief Summary Of Job Duties

Under direction of the Personnel Manager and Asst. Personnel Manager, the Serving Area Crew Leader oversees the student serving area crews in performing essential daily set up, break down and replenishing duties associated with the front of the house. The Crew Leader assigns daily duties, schedules breaks and acts as a liaison between the crews, the managers, and the kitchen department heads.

Education:

Required Qualifications

  • High School or equivalent combination of education and experience.

Work Experience:

  • Experience working in a kitchen.
  • Ability to organize front of the house food set ups; maintain high standards of food quality on display and food safety.
  • Excellent customer service with the ability to train coworkers, with strong communication skills.

Special Conditions of Employment

  • Ability to lift up to 50 pounds and work standing for up to 8 hours per day.

Job Functions And Percentages Of Time:

Dining Area Leadership- 40%

  • Serves as working leader overseeing student crews in setting up, breaking down, organizing and maintaining various components of the serving areas such as the hotline, grill area or salad bar.
  • Trains crew to use, clean and maintain equipment as it relates to the serving area.
  • Schedules front house crews and creates duty rosters
  • Each day, checks prior night's checklist for potential problems.
  • Acts as liaison with Principal Cooks to help identify and correct problems with presentation or quantity.
  • Communicates with cooks to establish information on all foods being served. Reviews information with crews for each meal.
  • Trains, supervises and evaluates student staff on proper front of the house duties.

Serving Area Liaison - 30%

  • Works with Principal Cooks and managers throughout the day to coordinate various duties for serving area crews. These include but are not limited to:
  • Gathers and organizes food attractively.
  • Keeps food replenished throughout the meal.
  • Keeps all serving areas clean and well maintained.
  • Breaks down stations at the end of a meal.
  • Serves food as necessary.
  • Prepares simple, uncooked items directly on the serving lines.
  • Disseminates information from the management team to the serving area crews.
  • Acts as a liaison with student customers, bringing issues to managers as necessary, and providing information to customers about foods being served.
  • Informs management of any maintenance issues or problems within the serving areas.

Dining Area Maintenance and Up Keep - 25%

  • Trains assistants and performs the following cleaning tasks in the serving square and dining room:
  • Maintains food quality and safety guidelines to achieve the highest public health standards and reduce the risk of food borne illness.
  • Maintains HACCP guidelines to ensure practices are in continued compliance with State and Federal Sanitation Guidelines.
  • Maintains the dining room during and after the meal, keeping areas tidy, tables cleaned, chairs pulled in and trays picked up.
  • Utilizes appropriate cleaning agents for assigned areas.
  • Cleans, replenishes and maintains all equipment associated with the serving areas, including toasters, beverage machines, ice dispensers, frozen yogurt machines, flat grills, char grills and salad bars during and after the meals.

Other Duties - 5%

  • May be reassigned during slack times or summer conferences season. May be required to participate in heavy cleaning during shut-down periods or slack time. Performs other duties as assigned.
  • Maintains the equipment in the serving areas. Brings repair issues to the attention of the managers.
  • Works with the managers to communicate issues about the serving square, traffic flow and food presentation for future planning and improvements.
  • Ensures that safe & sanitary food handling procedures are used in own work as well as in the work of subordinates.
  • Notifies the manager of broken or unsafe equipment on a timely basis.
  • Keeps assigned work area orderly and clean, including all equipment.
  • Assists other departments whenever possible or as needed to put meals out on time.
