Independently manage and execute bakery projects to innovate and enhance products that cater to the market and customer requirements
Conduct thorough research, create experimental designs, gather supporting data, and perform statistical analysis for new products and solutions
Scale up bench top development to pilot scale, commercial production, and integration into customers' manufacturing processes
Utilize analytical equipment such as Mixolab, Farinograph, moisture analyzer, pH meter, incubator, texture analyzer, and bakery equipment
Conduct standard and accelerated shelf-life studies
Provide direct support to customers for new product launches, technology training, troubleshooting, and technical assistance
Maintain strict confidentiality for sensitive documents and adhere to established record retention guidelines
Recommend process improvements for the department/company
Adhere to all company policies and procedures while performing the job
Fulfill other necessary or assigned duties
May be required to work extended hours as needed
Qualifications:
A BS degree in Bakery Science, Food Science, Cereal Chemistry, or a related field is required, along with 3+ years of technical experience/development work with a major food or food ingredient company.
The ideal candidate should have a strong knowledge of food science technology, baking experience, and proficiency in using functional ingredients for baking.
They must understand bakery product formulation and industrial processing, with expertise in dough fermentation, make and bake, par bake, refrigerated raw dough, frozen baked dough, and raw frozen dough formulations, as well as product development.
Additionally, they should have a customer-focused approach, a drive for results, and a can-do attitude. It's important to establish trust with customers and become their go-to expert.
The candidate should be a motivated self-starter with strong time-management skills, open and clear communication skills, and be a team player who can collaborate effectively with others.
Competency in project management, understanding of experimental design and statistical analysis, and the ability to communicate information and ideas clearly are also required.
