Description/Expectations: The main duty of the lab technician will be overseeing the proper fermentation of all Hendler Family Brewing Company products. This will include collecting fermentation samples, inputting data, calibrating spunding valves and generating a report for the weekend coverage. The lab technician will also be responsible for performing basic daily laboratory tasks. This is an entry level position.
Essential Duties and Responsibilities:
Collecting and reading fermentation samples
Monitoring fermentation temperatures
Calibrating lab instruments
Sterile sampling of beer and tanks throughout the fermentation and lagering process
Maintaining fermentation logs
Writing a report for the weekend coverage to ensure fermentation plans are being followed and no steps are missed
Setting up forced fermentations
Performing cell counts on actively fermenting beers and yeast slurries using the Cellometer X2 automated cell counter
Running beer through the Anton Paar DMA 4500 and alcolyzer
Collecting packaged beer samples for testing
Setting up and analyzing forced fermentations
Aseptic micro sampling from fermentation vessels and brite beer tanks
Operation of the autoclave
Analysis of aged beer from the beer library
Sensory analysis: go/no-gos for beer in process as well as packaged product, diacetyl detection on forced VDK fermenter samples
Job Requirements:
Knowledge, Skills, and Abilities:
Self-motivated, self-directed, and able to work with minimal supervision
Ability to think critically and troubleshoot
Ability to work in a loud, temperature variable environment for extended periods of time
Ability to stand for extended periods of time
Ability to work with cleaning and laboratory chemicals with necessary safety precautions
Education and Experience:
Bachelor of Science in microbiology, biology, biochemistry, food science, related field, or equivalent experience
Experience in a quality control/quality assurance position in the brewing or food/beverage industry preferred but not required
Any formal brewing education is a huge plus
