Job Summary
This role is at the prestigious Harvard Business School campus and Executive Education program and includes all catering and dining outlets. We are looking for a Pastry Chef with union experience and strong people skills to lead an hourly, union team of 12 associates/staff. This position requires high volume and heavy catering experience, as well as the flexibility to work nights and some weekends.
As an Executive Pastry Chef, you will oversee the preparation, production, and procurement for the pastry department. You will be entrusted with the handling, preparation, and storage of perishable goods, adhering strictly to HACCP guidelines to ensure safe, efficient, and sanitary food production, preparation, and presentation. Your role includes menu development, inventory management, ordering, sanitation, and supervising hourly associates, including hiring, counseling, coaching, and development.

Key Responsibilities:
- Oversee the preparation, production, and ordering for the pastry department.
- Manage the handling, preparation, and storage of perishable products.
- Ensure compliance with HACCP guidelines for efficient, safe, and sanitary food production.
- Develop menus and manage inventory.
- Supervise and develop hourly associates, including hiring, counseling, and coaching.
- Culinary degree preferred.
- Minimum of three years of experience in upscale, high-volume restaurant or catering operations.
- Demonstrated creative and quality-driven pastry skills.
- Strong knowledge of food and the ability to recognize high-quality products.
- In-depth understanding of current food and catering trends, with a focus on seasonal ingredients, production, sanitation, food cost controls, menu development, and presentation.
- Proficiency in Microsoft Office and overall computer skills.
- Knowledge of safe and sanitary food handling principles.
- ServSafe or Department of Health certification is a plus.
