Job Overview

The Director CND Operations will ensure compliance with all nutrition-related and procurement guidelines as directed by the Texas Department of Agriculture, the United States Department of Agriculture and of the district. The incumbent will oversee food preparation by the child nutrition staff, improve the quality of food items served at all campus locations, enhance the quality of the customer service provided, and ensure compliance with mandated health regulations.

Position Description

Essential Duties and Responsibilities

Food Service Operations and Policy

  • Oversee the total operation of all school kitchens/cafeterias to ensure compliance with all federal, state, and local regulations for the Child Nutrition programs (i.e., SBP, NSLP, ASSP, CACFP, SSO, CEP, USDA Foods, etc.)
  • Supervise the Assistant Director of Nutrition and Child Nutrition Supervisors to monitor the daily operations of all campus kitchens
  • Oversee the development of department policies including kitchen SOPs, dress codes, handbooks, and safety policies
  • Implement the use of departmental developed programs and documents for daily operation of all record keeping requirements to ensure compliance with the maintenance of reports, such as Edit Checks, accountability, food production records, HACCP, and other required documents
  • Oversee the development of training programs and curriculum for training sessions
  • Facilitate menu planning and selection of commodities for use in menus annually
  • Lead the development of student friendly standardized recipes according to all regulatory mandates and ensures each campus location is adhering to the methods, practices, and procedures of quantity food preparation, serving and storage functions, (HACCP, etc.)
  • Supervise the coordination and facilitation of special department programs (i.e., health fairs, food shows or food competition events) and taste tests, to promote nutrition and maintain interest in the Child Nutrition Department
  • Manage the coordination and facilitation of food service-related activities for Parent Advisory Committees and District/Campus Student Groups

Personnel Management

  • Oversee personnel functions (i.e., interviewing, evaluating, supervising, and exits) to maintain adequate staffing, enhance personnel productivity, and achieve objectives within fiscal management
  • Hold staff accountable for following all HR policies and procedures including positive counseling, progressive discipline, neutral absent documentation, and termination requests
  • Coordinate the development and implementation of training programs, quality control policies and procedures, compliance standards, management techniques, and proper equipment operation for the successful operation of the Child Nutrition Department
  • Implement the use of the training kitchen to its fullest extent to train employees efficiently
  • Provide technical training and assistance to personnel concerning food production operations, activities, and related functions like purchasing, production, preparation, and service of menu items
  • Responsible for promoting employee growth, efficiency, morale and teamwork through professional growth and development

Safety

  • Responsible for ensuring facilities are maintained in sanitary conditions based on District expectations and in compliance with all health and safety codes and regulations
  • Monitor health inspection violations and ensure corrective actions are implemented especially regarding equipment needs and oversee Kitchen Equipment Supervisor to ensure equipment is repaired or replaced in a timely manner

Other

  • Participate in professional development activities as an active member of the local, state and National Nutrition Associations
  • Exhibit responsible, professional, ethical behavior in all business transactions and serve as a role model for all departmental staff
  • Maintain an appropriate level of technological competence to meet the needs of the Child Nutrition Department
  • Maintain current knowledge of, and ensure, culinary offerings are aligned with current industry trends
  • Responsible for working additional hours or days to meet departmental needs or functions

Supervisory Responsibilities

  • Supervise and evaluate subordinate's job performance to ensure effectiveness and makes sound recommendations about placement, assignment, retention, discipline, and dismissal in accordance with Fort Bend ISD Policies and Procedures
  • Address complaints and resolve problems in a timely and appropriate manner

Qualifications

Qualification Requirements

  • Bachelor's degree required in nutrition related fields, Hotel/Restaurant Management or related field from an accredited college or university
  • Master's degree preferred in nutrition, Hotel/Restaurant Management or business administration
  • Texas Food Manager Certification Required - within 3 months of employment.
  • Minimum of 5 years of experience in a Texas public school food service operation
  • Strong computer skills including all Microsoft Office products and the ability to learn new systems and software
  • Ability to develop ideas, create goals and market the Child Nutrition Department
  • Strong organizational skills
  • Excellent interpersonal and communication skills, both oral and written
  • Ability to demonstrate good reasoning and analytical skills

The position requires occasional walking, standing, sitting, bending, stooping, kneeling, crouching, crawling, and lifting/carrying work related items weighing less than 40 pounds, such as books, papers and presentation materials. The employee is regularly required to use hands to finger, handle, or feel objects, tools, or controls; reach with hands and arms; and talk or hear. Specific vision abilities required by this job include close vision, color vision, and the ability to adjust focus. Attendance at conferences and professional development is required. Work involves everyday risks and discomforts which require normal safety precautions when operating equipment or performing job duties. May work prolonged or irregular hours and must be able to maintain emotional control under stress.

Additional Information

  • Work is performed in the kitchen and office setting and/or at various location throughout the district or industrial food preparation environment where critical deadlines, frequent interruptions and priority changes are prevalent. Work may require frequent travel throughout the District for direct observation of the program operations which will cause exposure to pressurized kettles, hot overs, cold freezers and other food service equipment in the process of training and/or supervision of others. Significant lifting, carrying, pushing and/or pulling; some stooping, kneeling, crouching, crawling, fine finger dexterity and the ability to lift 50 pounds as required. The job is performed under some temperature extremes and generally requires 20% sitting, 40% walking and 40% standing. Repetitive hand motions, use of the computer and district-wide travel may be required. Attendance at outside or evening events, such as School Board meetings is required. Work may involve stressful situations requiring long hours to meet the required deadlines.
