Banquet Bar Captain

POSITION SUMMARY / BASIC FUNCTIONS: The Bar Captain will serve and make drinks at banquet bars and supervise over the other bartenders in the banquet department. The Bar captain will train incoming bartenders and maintain proper inventory controls. POSITION QUALIFICATIONS - FORMAL EDUCATION, MINIMUM KNOWLEDGE, TRAINING & WORK EXPERIENCE: High school diploma or equivalent. Two to three years bartending experience. Extensive liquor, beer, wine and mixology knowledge. One-year banquet bar experience, preferably with high-end resort experience. Pleasant and helpful personality. Excellent customer service and communication skills. ESSENTIAL FUNCTIONS: Compose and be knowledgeable of standard drinks and liquors or wines specific to banquet bars. Mix drinks for servers according to standard recipes. Familiarity with the wine list and the stemware and appropriate garnishes used. Follow procedures as outlined in employee manual and bartender's manual. Jigger pour, making drinks for servers only when rung in on the POS systems. Keep bars stocked and clean. Implement side work sheet. Plan, monitor and maintain par levels for bar inventory as deemed necessary by the Manager of Banquets. Prepare daily orders for bar items to maintain pars, secures all liquors, beer and wine. Be knowledgeable of the menu for guests ordering at the bar. Ensure the consistency in the presentation and recipes of all cocktails. Responsible for learning suggestive up-selling techniques and using them during services. Be familiar with and enforce all policies related to liquor liability laws. Responsible for cash handling and bank procedures as outlined by the Accounting Department. Be familiar with all property amenities and other restaurants. Maintain cleanliness of all workplace areas that apply to the bar. Maintain a perfectly crisp and clean uniform. Completes closing duties. Report work related accidents, or other injuries upon occurrence to banquet captain or manager. MARGINAL FUNCTIONS: Perform other related duties as requested by the department. Promptly greet members and guests as they enter restaurant or bar area. Deliver beverages and cocktails to tables as needed. Assist in other food and beverage functions, as needed. Assist in other areas of the restaurant, including seating members and guests. Interface positively with other departments, offering assistance when needed. Ability to work any assigned shift / work schedule. Respond to any reasonable task as assigned by the Banquet Manager, Assistant Banquet Manager, Director of Food & Beverage (F & B), Owners, the Managing Director (MD) or the Resort Manager.
