Did you know that approximately 60,000,000 cwt of sweet corn is grown annually on around 500,000 farms in the United States, with a value of about $775 million? Corn plays a vital role in Florida agriculture, generating over $100 million annually. The University of Florida Institute of Food and Agricultural Science emphasizes that Florida industries contribute over $100 billion in sales, supporting more than a million jobs. About 1/3 of Florida's land is currently used for agriculture, with projections indicating the daily loss of about 120 acres of agricultural land due to development and sea level rise, posing a threat to the state's agricultural landscape. BREAKING: Red Lobster expected to file for bankruptcy as soon as next week (Source: WSJ) Some are placing the blame on an "all-you-can-eat shrimp deal" that caused >$11M in losses, but Red Lobster's financial woes began well before Darden sold the company for $2B ten years ago 👇 Darden Restaurants (owner of Olive Garden) sold Red Lobster in 2014 for 9x EBITDA after growing operational challenges. "Darden stopped investing in Red Lobster. Things slowly deteriorated," said Les Foreman, Director of Ops and VP at Red Lobster from 2002 to 2022. Some shareholders (like Starboard Value LP) viewed this as a "hurried, reactive" decision that could "result in permanent destruction of shareholder value." Over a decade later, Starboard prediction seems prescient, as Red Lobster is now reportedly planning to file for bankruptcy protection and shed some of its 650 US locations. Grain fact: craft breweries generate enough leftover grain (often called "spent grain") to feed the world. According to NWBA.com, in 2021 208 million barrels of beer were produced in the U.S. Each barrel is 31 gallons and each gallon of beer produces 1 to 2 pounds of spent grain, which averages out to be 9.6 billion pounds of spent grain produced in the U.S alone. Typically, spent grain gets hauled off to a landfill or by farmers to be used as animal feed, but as the brewing industry grows, more spent grain is being produced than farmers can use. Since spent grain contains proteins that are rich in lipids and fiber it has a lot of nutritional value and letting it go to waste seems, well, wasteful. That's where upcycling comes in because it offers a solution to salvage the spent grain and convert it into nutritious, shelf-stable ingredients.
