As many of you have come to realize, the new dining reality is characterized by adaptability, innovation, and a relentless focus on meeting the evolving needs and preferences of today's diners. One notable trend that has caught my eye is the growing reluctance of restaurants to accommodate large parties of diners. Instead, establishments are opting to focus on smaller more intimate gatherings, catering to the preferences of those who are seeking personalized experiences and heightened attention to detail. Although this can help diners create more controlled and intimate atmospheres that ensure guest receives the utmost care and attention, we can't ignore the other side of the coin: some folks still enjoy dining in large groups. Costa Vida Executive VP of Strategic Growth Wade Allen comments on something really insightful and something I have implemented in our catering programs. “The metric we found that influenced all of our channels to be successful was ‘guests with a problem,’” Allen said. “We wanted to find out how many guests had a problem across these channels, vs. the number of transactions we’re conducting. We started measuring that and were able to find out where the problems were. Once they mined the data, Allen said Costa Vida worked to create consistency across its channels by distributing the metrics and a ranking of all the restaurants from start to bottom." Restaurant chains in the U.S. account for a market capitalization of almost $500 billion (as of the end of 2023) divided among 48 companies. Every foodservice category has a clear market share leader with one exception - casual dining. While the leaders in QSR, Coffee, Fast-Casual, and Pizza each own more than 60% of the category’s market cap, for Casual Dining the leader accounts for 45% of the segment’s market cap. This is another fascinating proof point that casual dining is ripe for M&A and consolidation.
