I plan jobs on individual pieces of paper which I can shift around as conditions or priorities change. The papers have the job identification, the deadline, and progress (in the number of words, in my case) down to the nearest 5 minutes. I also note special instructions or word choice (e.g. "patient" or "subject2, "trial" or "study"). With large jobs, I also plan in Excel: file name, number of words, planned timeframe for the daily number of words (e.g. date - "down to x words"). Then, I delete or mark the number of words done, i.e. I count down. So at any point in time, I can see at one glance where I am and if I am within my planned schedule.
