TYLER, Texas (KLTV) - Our friend David Wallace owned a popular eatery in Tyler some years ago. It was called The Tea Room, and I’ll bet some of you remember it.

This is the shrimp-pasta salad that was very popular with many of his customers. Enjoy!

Monday is the unofficial start of Summer. This marks the time we lessen our hot and hearty meals of the colder months and begin to choose lighter and cooler foods we enjoy at this time of year.

The following recipe for a SHRIMP PASTA SALAD is easy and quick to prepare. It will hold well for several days in the fridge and can therefore be an easy dish to make ahead of time. It is very delicious and a dish we served every day, in our restaurant, at THE TEA ROOM years ago.

One special piece of advice: always use the largest shrimp you can afford, even if you have to cut the shrimp in smaller pieces. Tiny shrimp look and taste like bait.

You will need:

2 cups of pasta (i’m using Zita today)

2 cups cooked shrimp (peeled and deveined)

1 cup of mayonnaise

1/2 cup ketchup

1/2 teaspoon of garlic powder,black pepper, and worcestershire sauce

1/2 cup of chopped celery, bell pepper, dill pickles, and tomatoes

Cook pasta, drain well, and place in a large glass bowl. Add remaining ingredients and toss (mix) well, making sure everything is coated. Cover and chill, until salad is cold. Serve over some lettuce and place some fruit to the side. Serves 4-6 people a delicious lunch or supper.
