Mediterranean-inspired chicken skillet supper by Mama Steph

TYLER, Texas (KLTV) - This scrumptious chicken skillet supper is incredibly easy to make, with just a few fresh ingredients to create a wonderful, quick supper in under 30 minutes.

Mediterranean-inspired Chicken skillet supper with tomatoes and olives

Ingredients

  • 1 pint grape tomatoes
  • 16 Kalamata olives, pitted and halved
  • 1/2 cup chopped white onion
  • 3 tablespoons olive oil, separated
  • 4 to 6 chicken thighs, preferably skin-on
  • salt and pepper
  • 1/2 teaspoon ground thyme
  • juice of half of a lemon (optional)

Directions

  • Preheat oven to 475 degrees. Toss tomatoes, onions, olives, thyme, and 2 tablespoons of the oil together in a medium bowl. Set aside.
  • Season both sides of each chicken thigh with salt and pepper. Heat a large ovenproof skillet over high heat until hot. Add remaining tablespoon of the oil; heat until hot but not smoking. Place chicken in skillet, skin sides down; cook until deep golden brown, about 4 minutes. Turn chicken over. Add tomato mixture to skillet, filling the spaces between the chicken thighs.
  • Transfer skillet to oven. Roast until chicken is cooked through and tomatoes have softened, about 18 minutes.
  • When removing from oven, you can sprinkle the lemon juice over the chicken. As you serve each chicken piece, feel free to sprinkle with some flaky parmesan or a bit of feta.
