(CNN) – Consumers may see another Sriracha shortage in the near future.
California-based Huy Fong Foods says it will not produce any more of the popular hot sauce until after Labor Day.
The company says the temporary pause is because the red jalapeño peppers used are too green, which affects the color of the Sriracha.
The company’s red winter jalapeño peppers are grown in Mexico where there is currently a severe drought.
Hot, dry conditions can disrupt the ripening process and prevent the peppers from achieving their prized red color.
Sriracha makers other than Huy Fong Foods haven’t reported any pepper shortages.
