Greek Yogurt Chicken Salad by Kinsey Thompson with East Texas Food Bank

TYLER, Texas (KLTV) - East Texas Food Bank’s Kinsey Thompson has a seemingly endless supply of healthy, tasty recipes that are good for you, and that are economical, too. She joined us this week in honor of National Nutrition Month to make this delicious chicken salad with a few new twists that you’ll love.

Greek Yogurt Chicken Salad

Ingredients

  • 2 cups canned chicken
  • ½ cup diced red onion (or any you have on hand; Kinsey used green onion in her demo)
  • ½ cup diced apple
  • ½ cup grapes, halved
  • ½ cup dried cranberries
  • ½ cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • ½ teaspoon garlic powder
  • salt and pepper to taste
  • 1/4 cup slivered almonds, chopped pecans or walnuts, etc. *optional

Instructions

  1. In a large bowl, combine chicken, red onion, apple, grapes, dried cranberries, Greek yogurt, lemon juice, garlic powder, salt and pepper and *slivered almonds or other nuts.
  2. Let chill or serve on crackers or sliced bread.
