Spicy garlic-lime chicken tenders by Mama Steph

Garlic-lime chicken tenders

Ingredients

1 teaspoon salt

1/2 teaspoon black pepper

1/2 (or more, for spicy heat) teaspoon cayenne pepper

2 teaspoons garlic powder

¼ teaspoon dried thyme

¼ teaspoon dried parsley

⅛ teaspoon paprika

⅛ teaspoon onion powder

1 to 1.5 pounds chicken breast tenders

2 tablespoons butter

1 tablespoon olive oil

3 tablespoons lime juice

Directions

1. Combine all the spices in a small bowl and whisk togethr.

2. Sprinkle over the chicken.

3. Add the oil and butter to a skillet, and set it over medium heat. Allow butter to melt, and swirl the pan to coat well. Don’t allow it to burn! If it gets dark, carefully wipe out the pan and start over.

4. Add the spice-rubbed tenders to the hot skillet. Cook three minutes, then flip over and cook three on the other side.

5. Drizzle the lime juice over the chicken while it’s still in the pan, then cook another two or three minutes. (You can check the center of one of the tenders to ensure they’re completely done. There should be no pinkness to the meat in the center.)

6. Remove the pan from heat, and allow chicken to sit for a few minutes. Then serve the chicken tenders and some of the pan sauce over rice. Enjoy!
