Recipe Ingredients

The homemade peanut sauce on this Thai chicken pizza is tangy, sweet, and spicy for the perfect balance of flavors. Scroll to the recipe card at the bottom of the post for exact amounts.

For the Pizza

  • Naan – Don’t worry if it’s slightly stale. It’ll crisp up in the oven anyways.
  • Rotisserie chicken – Feel free to use homemade shredded chicken.
  • Green onions – You only need the green parts.
  • Cilantro – It must be fresh cilantro for a fresh, spicy flavor.
  • Carrot – Leftover baby carrots are great for this.
  • Mozzarella cheese – Any melty cheese like cheddar, Gouda, or Muenster work.

For the Peanut Sauce

  • Water – You can also use veggie stock.
  • Soy sauce – I prefer low-sodium. Reduce the amount by 1/4 if you use regular soy sauce.
  • Rice wine vinegar – Cooking sake works too.
  • Ginger: Go for fresh or ground ginger.
  • Garlic: Fresh garlic and garlic paste are best. Garlic powder can make the sauce grainy.
  • Red pepper flakes: Cayenne pepper or chili oil are good swaps.
  • Creamy peanut butter: Use crunchy peanut butter for a bit of texture.

How To Make Thai Chicken Pizza

The pre-made naan saves you a bunch of prep time. All you have to do is assemble the pizza. Scroll to the bottom of the post for the full recipe card.

  • Prep the oven. Preheat the oven to 375F. Place the naan on the baking sheet.
  • Make the peanut sauce. Whisk all of the ingredients for the peanut sauce in a small bowl until smooth.
  • Assemble the pizza. Divide the peanut sauce between both naans. Add mozzarella, chicken, cilantro, carrots, and green onions to each pizza.
  • Bake it. Pop it into the oven for 10 minutes or until the cheese is melty. Remove it from the oven and let it cool 10 minutes. Slice, serve, and enjoy!

Tips & Variations

This Thai chicken pizza is a great way to use up leftover chicken and veggies that you have laying around in the fridge.

  • Use leftovers. Shred any Spicy Thai Grilled Chicken, Sesame Lime Chicken, or Curry Grilled Chicken leftovers and use them for this recipe.
  • More veggies. Thinly sliced mushrooms, bell peppers, bean sprouts, and small broccoli florets are great ways to make this a heartier pizza dinner.
  • Make it vegetarian. Swap the chicken for crumbled tofu, tempeh, or just add more veggies.
  • Use store-bought. If you’re in a rush, use your favorite store-bought Thai peanut sauce or dressing instead. I prefer low-sodium versions.
  • Increase the heat. Slice some Thai red chili, jalapeños, or serranos and sprinkle it over the pizza to taste for a kick of heat.

Serving Suggestions

Proper Storage

I always make two pizzas, one for eating right away and another to freeze for later.

  • Fridge: Place it in an airtight container for up to 4 days.
  • Freezer: Wrap it whole or sliced with plastic wrap twice. Freeze for up to 3 months. Thaw overnight in the fridge and bake as usual. You can also reheat it straight from frozen in the oven by adding 10 minutes to the reheating time.
  • To reheat it: Microwave it in 15-second increments until warm. You can also use the oven at 300F for 20-25 minutes.

Pizza Ingredients:

  • 2 naan flatbreads
  • 8 oz. shredded rotisserie chicken
  • 1/2 cup green onions, thinly chopped
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup carrot, grated
  • 2 cups of shredded mozzarella cheese

Peanut Sauce:

  • 1/4 cup of water
  • 1 T. low sodium soy sauce
  • 1 tsp. rice wine vinegar
  • 1 tsp. fresh grated ginger or 1/2 tsp. of ground ginger
  • 1 garlic clove minced
  • 1/2 tsp. red pepper flakes
  • 1/4 cup + 1 T. of creamy peanut butter

Instructions

  1. Preheat oven to 375ºF.
  2. Mix water, peanut butter, rice wine vinegar, low sodium soy sauce, fresh grated ginger {or 1/2 tsp. of ground ginger}, garlic clove, and red pepper flakes. Mix together until combined.
  3. Next, put both pieces of naan on a baking sheet.
  4. Evenly distribute Peanut Sauce, mozzarella, chicken. {4 oz. to each naan}, fresh chopped cilantro, grated carrots, and green onions over each naan.
  5. Bake for 10 minutes.
  6. Cut up and serve!
