The Big Tech Show: Tight margins and spinning plates – the CEO of Nory on how restaurants can utilise AI

How is one entrepreneur using AI to turn a profit? How does it work? And where do most restaurateurs go wrong?

CEO of Nory and founder of chicken fast food chain, Mad Egg, Conor Sheridan joined Adrian on The Big Tech Show this week.

Nory is an operating system for restaurants that uses AI to identify areas where a restaurant can be more profitable. For example, suggesting optimal staffing levels based on the number of coffees sold per hour in order to maximise profitability.

The AI company has just raised $16 million dollars from one of Silicon Valley’s most famous venture capital companies.

Sheridan gave an insight into how he set up the Mad Egg brand in the interview. He chose chicken as a product because it is the most sold protein in the country. The chain specialised in fried-chicken sandwiches which didn’t exist in Ireland at the time, and were hugely popular in the States, Asia and London. He felt that if he could connect with some of the best poultry farms in Ireland then it would be a cost effective and high value offering to the customer.
