This is a huge, encyclopedic cookbook. It is also beautiful and unique and thus worth spending some time with. For those who are from the South, its intention is to help you rediscover ways of doing things that perhaps are unique to a region or a previous generation. For those who are not from the South, it is an authoritative source for traditional Southern recipes and ways of making them, i.e., biscuits, gumbo, and more. While a few entries are not especially useful (frog legs?), the author is professionally trained and has taken the time to include short essays in each section.

Just OK at best

Some interesting comments but overall the recipes are a little on the plain and boring side.
It's a walk down memory lane and my grandma's cooking - the recipes don't use much spice

Quite a vast compendium of southern style cooking. Ranges from meats, fish, veggies, breads, desserts, and more. Mostly classical, great section and varieties of grits and biscuits.

An encyclopedic run-through of just about every possible Southern variation on a particular dish, Dupree's extensive cookbook is filled with stories behind recipes, useful tips from a well-regarded bibliography, and food that just looks good. This was written to a large audience, so if you were looking on an extensive history of chess pies, or background history on each state's cultural influence, you might be a little disappointed, but at least there will be a recipe you can make to soothe that disappointment.

I received a free copy of this book from the publisher.

I've always liked Nathalie Dupree so I was really excited to receive this book. It's encyclopedic and is a wonderful reference for everything Southern (American cooking, that is). The basics are all here, as well as some modern twists on classics. The photos are well-done, especially those that are instructional for technique, though I would have liked to have seen more. This is a beautiful book that would make a great gift.

What a wonderful cookbook. True southern recipes made with fresh produce, fish, poultry, meat... Great desserts. Everything is just as my grandmother made when I was a child. It is nice to know that these recipes will be continued in this day of fast food and processed food. And no, fried food is not what we are all about. Great reading as well!

I am now the proud owner of a library card at Mooresville Public Library in my new hometown of Mooresville, NC. This is the first book I chose to check out. What a resource this will be. I found it full of delicious easy recipes for a taste of the south. I've ordered a copy of my own.

This is the heart of my collection of cookbooks. I am Southern. I recall many recipes and techniques but having them at hand in such a lovely work is a great boon.
