The rise of the savoury ice cream? Waitrose boss encourages shoppers to pair BLUE CHEESE with its caramel dessert

A Waitrose boss is encouraging shoppers to pair blue cheese with its caramel dessert for a more adventurous twist on a classic pudding. 

One of the supermarket's top chefs has revealed that his favourite way to 'elevate' ice cream is by crumbling Stilton over it.

Will Torrent, senior innovation chef at Waitrose said that while the supermarket's sea salt and caramel ice cream is delicious all on its own, he prefers to add a tangy element. 

And the chef likes to go one step further and even add a glass of fruity port for a rich, sharp taste. 

And Mr Torrent is hoping his suggestions will catch on and has encouraged customers to experiment with savoury flavours this summer.

Starting off small, he suggested vanilla ice cream with a drizzle of olive oil and some sea salt before moving on to bolder flavours. 

Unusual ice cream flavours: 

The Ice Cream Project, brainchild of handbag designer Anya Hindmarch, has come out with a series of interesting ice cream flavours.

Some of the savoury delights on offer include:

  • Classic pesto
  • Bird's Custard
  • Sarson's Malt Vinegar
  • Kikkoman soy sauce 
  • Heinz Baked Beans

For those with a more adventurous palette the innovation chef has suggested pairing Waitrose's No.1 Belgian White Chocolate Ice Cream with the No.1 Rouzaire Brie de Meaux.

He told The Telegraph: 'The Belgian white chocolate is indulgently sweet and creamy which pair brilliantly with the delicate and earthy flavour of the Brie de Meaux.'

Continuing with the cheese theme, the chef also suggested dark 70 per cent chocolate ice cream with soft cheese for a cross between bittersweet and rich buttery flavours that is a 'brilliantly fresh and delicious scoop that is super indulgent and perfect for the summer.'

The move away from sweet deserts comes after Wookey Hole Caves in Wells, Somerset, partnered with Marshfield Farm ice cream and decided to make an April Fool’s joke a reality by serving cheddar cheese ice cream.

The cheesy ice cream was launched earlier this year and the website said that the unique ice cream was handcrafted in small batches.

The cheese producers hoped it would be 'the perfect combination for everyone who struggles to choose between a dessert and the cheese board for pudding' but it had mixed reviews from the public.

And Wookey Hole Caves is not the only tourist attraction that has come up with some bold new flavours. 

English Heritage divided opinion last year when it launched a brown bread ice cream, based on an 18th century Georgian recipe at some of its sights including Stonehenge.

It even considered Parmesan and cucumber-flavoured ice creams before settling on the brown bread concoction.
