Corvo is a European-inspired bar and kitchen with impressive hospitality credentials and an unscripted approach to wining and dining. You can sit at the bar and have a drink, grab a table out the front and nab a little bit of autumn sun, or settle into a table in the dining area or one of the stools at the counter overlooking the kitchen.

It’s run by sommelier Alo Simmulmann, and his partner Yvonne Bluemi. Simmulman, originally from Estonia, worked at several high-profile venues in the UK before moving to Perth. Here, he worked at The Old Brewery, Steves and Market Grounds before opening function space Vin & Flower with Bluemi (who has an Austrian background).

Similarly, head chef Rose Bass has extensive experience in top European restaurants and has British background herself. After helping chef Phil Howard’s Elystan Street win its first Michelin star, Bass was assigned to running Union, his restaurant in the French Alps. Her pared-back menu showcases European fare made from local produce to echo the trio’s shared heritage. Some of her early dishes included grilled Wagin quail with juicy blistered grapes and fig-leaf oil, and a fish crudo brightened with chilli and citrus.

Simmulmann’s tome-like wine list leans classic, collecting bottles from across Europe and Australia. Big names such as Leeuwin, Clonakilla and Tyrrell’s are well represented.
