Is White Rice and Kimchi a Healthy Snack?

We know that kimchi is good for you, but what about if you serve white rice with it?

We teamed up with nutritionist McKel Hill, MS, RD, LDN from Nutrition Stripped to give us some friendly feedback on how we’re doing in the snack department. Are they good for us? Could they be better? We don’t always know, but McKel does. These are our snacks, attacked.

Test kitchen manager Brad Leone is more of a grazer. He's a big guy but he chooses to eat several smaller meals throughout the day rather than sit down to one big serving. So what does a guy like BA Brad pick for snack time? Well, he has a few favorites. The list is a tiny window into his heart and mind. Here, take a look:
•Ham on hot bread
•Waffle with Greek yogurt and frozen berries
•White rice and kimchi
•Hard boiled egg on paratha with harissa
•Pizza bagel! (exclamation point his)

If you're lucky, Brad will offer you some of his paratha snack and smear on a little Dijon on your open-faced ham sandwich. But knowing Brad's propensity for Asian flavors, we wanted McKel to tell us about that rice and kimchi snack.

McKel, we need our Brad in tip top form. Is he snacking smart?

This sounds delicious! I would recommend adding either a protein source or healthy fat to complement the white rice, making it a nice balance of lasting energy. Try adding edamame (has both protein and healthy fats), a hard boiled egg, or a small slice of grilled chicken, etc.

With fermented foods [like kimchi] there are a host of health benefits, the main one being that they're naturally fermented and contain good bacteria (aka probiotics) which keeps our digestive system healthy and regular.

Snack on, Brad, but go ahead and put an egg on it.
