Avocado toast is soo last year. Actually, now that we mention it, we’ve been singing the praises of avocado toast for at least two years now.

Despite all the new ways we’re topping our toast this year, we’re still not tired of our old favorite. Sure, it’s perfect with a little olive oil, salt, and a citrus squeeze, but we like to dress it up when the mood strikes. You've already tried Your New Avocado Toast, right? Good. Here, a few more of our favorite riffs.

Chile Oil: We make our own but your favorite spicy oil or hot sauce will do just fine.

Crumbled Feta: Actually, almost all of the cheeses would work here. Mash some Parm or Pecorino in with the avocado or top with cotija or queso blanco. Thin slices of griddled haloumi anyone?

Olive Relish: This is just a mixture of chopped olives, lemon zest and juice, chile flake, and olive oil. But you could definitely use jarred tapenade if you have it.

Salsa Verde: What? You need a recipe or something?

Toasted Nuts and Seeds: Use sunflower, pumpkin, almonds, cashews, hazelnuts, whatever you like. Toast them in a small skillet in a little olive oil until sizzling and golden and season with salt and pepper. Toss a little bit of whole spice in there if it tickles your fancy—we like a little fennel or cumin seed.

But wait, there's more! Try your avocado toast with pickled red onions. Or, add some bacon (obviously) or fresh chorizo. Sliced tomato is a must in summer. Layer with hummus or babaganoush any time of year. Crispy roasted broccoli is a nice contrast to avocado’s creaminess, too. The truth is that avocado’s mild flavor and buttery texture play nice with just about anything. Got some new ideas for us? Holler.
