Low investment and high reward, this not-so-traditional larb is the unofficial late-night meal of much of the BA staff.

Ingredients

2

Tbsp. soy sauce

1

Tbsp. dark brown sugar

1

tsp. fish sauce

1

Tbsp. sambal oelek or Sriracha, plus more for serving

Tbsp. vegetable oil

3

scallions, white and pale green parts only, thinly sliced

2

garlic cloves, finely chopped

1

lb. ground chicken

Kosher salt

Bibb lettuce leaves, lime wedges, and tender herbs (for serving)

Preparation

  1. Step 1

    Mix soy sauce, brown sugar, fish sauce, and 1 Tbsp. sambal oelek in a small bowl; set aside.

    Step 2

    Heat oil in a skillet over medium. Add scallions and garlic and cook, stirring occasionally, until softened (a little color is okay), about 3 minutes. Add chicken and lightly season with salt. Cook, breaking up with a wooden spoon and tossing occasionally, until chicken is cooked through, 5–7 minutes. Add reserved soy sauce mixture and cook, tossing occasionally, until liquid is almost completely reduced, about 2 minutes.

    Step 3

    Serve chicken mixture with lettuce, herbs, lime wedges, and more sambal oelek for making lettuce wraps.

  • Wonderful! Just the right amount of spice and as easy as was advertised. I doubled the soy mixture and recommend doing this as I used ground chicken breast and was afraid it would be too dry.

  • Added ground white pepper that balanced out the flavors. Might make again and use with salad for a bit bigger meal. Ate with Crispy Chile Oil-excellent-instead of Sambal Olek.

  • No review - yet. Can I use Indonesian sweet soya sauce instead of the regular soya sauce+dark brown sugar?

  • These were so tasty! We also doubled the soy mixture and it was perfect. Next time I would like to add a little veggie on top maybe some shredded carrots or a nut for a little crunch. Definitely will be making these again soon!

  • I like the convenience of using ground chicken instead of having to cut up whole chicken breasts or thighs. I had all the ingredients on hand already, since we like Asian food. It is so easy and quick to make. I decided to make a bowl meal out of it though instead of lettuce wraps so that we could watch TV and have dinner at the same time. I simply put the cooked chicken at the bottom of the bowl, put the scallion garnish on top, added some shredded jicama I had on hand, squeezed the lime over it and covered it with shredded bibb lettuce. My husband suggested we make a large batch of the sauce mix and keep it refrigerated so that we can make this recipe often. We plan to make this a regular meal option.

  • I doubled the recipe and made it for a couple of friends. It was very easy to make and delicious. It was the perfect amount of spice and everyone really enjoyed the meal.
