An easy-drinking aperitif made slightly more potent with the addition of gin.

Ingredients

honey syrup

¼

cup clover honey

assembly

cups gin

¾

cup fresh lime juice

½

cup Aperol or Cappelletti

Angostura bitters

Champagne or sparkling wine

Preparation

    Step 1

    Combine honey and 2 Tbsp. hot water in a small jar; cover and shake to dissolve honey.

    Step 2

    Combine 6 Tbsp. gin, 3 Tbsp. fresh lime juice, 2 Tbsp. Aperol, 1 Tbsp. honey syrup, and 2 dashes of Angostura bitters in a cocktail shaker; fill shaker with ice. Cover and shake until outside of shaker is frosty, about 30 seconds. Strain into 2 chilled coupe glasses. Top off each with Champagne and garnish with a lime wheel. Repeat three more times.

  • Made these last night as the ingredients list played to a lot of my preferred flavors in cocktails, but the balance seemed off. The lime juice seemed to blow away the gin and the aperol. If I were to make again, I would reduce the lime juice and either up the aperol or the honey syrup. I could also see upping the gin in place of some of the lime juice if you wanted this to be more spirit forward.
