Ingredients

cup panko (Japanese breadcrumbs, read more about other ways to use them here)

tablespoons unsalted butter, room temperature

¼

cup Dijon mustard

2

tablespoons thyme leaves, plus 3 sprigs

skin-on, bone-in chicken thighs, patted dry

Kosher salt, freshly ground pepper

1

pound medium carrots, scrubbed, cut into 3-inch pieces, halved lengthwise if thick

tablespoons extra-virgin olive oil

Preparation

  1. Step 1

    Place a rack in highest position in oven; preheat to 450°. Place panko in a small bowl. Mash butter, mustard, and thyme leaves in another small bowl with a fork (it will be a little lumpy). Season chicken thighs on both sides with salt and pepper. Arrange skin side up a rimmed baking sheet and smear all over skin side of thighs. Working with 1 piece at a time, firmly press chicken, skin side down, into panko so crumbs adhere. Place back on baking sheet skin side up.

    Step 2

    Arrange carrots and thyme sprigs around chicken and drizzle with oil; season with salt and pepper. Toss to coat and bake until carrots are tender and chicken is cooked though, 25–30 minutes.

    Step 3

    Heat broiler. Broil chicken and carrots just until panko is golden brown and carrots are tender and browned in spots, about 2 minutes. Transfer to a platter and pour pan juices over top.

  • It was very tender and juicy but a bit bland. I would add some red pepper flakes next time. I cut the carrots too thin and they burned a bit but still tasted fine. With the panko it’s a recipe that could go in many directions

  • What a great recipe! I went ahead and doubled the amount of Thyme because I love it and the chicken turned out beautifully. Add additional spices like cumin and paprika to really bring out the flavor.

  • So delicious and really simple! I've never done a sheet pan meal like this, and it turned out great. I'm not a big carrot fan, but I was eating these off the tray while waiting for dinner.

  • Added a little cumin and cayenne to the chicken for extra flavor and it was awesome. Watch carefully when it’s broiling to avoid burning the panko. Definitely would make this again.
