Astobiza Estate

Framed within the Txakoli de Álava Protected Designation of Origin, the singularity of the cultivated vineyard and the production technology used achieve wines with a marked personality and excellent quality. Astobiza wines are made exclusively with grapes produced in this vineyard, with a closed development, that is, with a cellar sized only to produce the harvest produced in its own vineyard. Therefore, its production is considered as Estate or Estate Wines, where the characteristics of the viticultural ecosystem are reflected in the wines produced.

Our vineyard is located in the small rural municipality of Oquendo, in the province of Álava, about 30 minutes from Bilbao, on a 10-hectare estate divided into 7 micro-plots. Located 250 meters above sea level, it is protected by mountains and far from the bottom of the valley, thus sheltering it from fog and winter frost, which are so damaging. 100% of our grape comes from autochthonous varieties, mainly Ondarrabi Zuri, some Ondarrabi Zuri Zerratie (Petit Corbu) strong> and a small plot of Izkiriota known as Gros Manseng.

We conceive the care of the field as something as important as the process of making the wine itself. With a philosophy based on sustainability, the values ​​of preserving the environment and maintaining tradition, we protect and pamper the countryside so that its fruit is as expected, respect for the terroir, without invasive techniques and with minimal mechanization. The maturation of the grapes is controlled to determine the optimal harvest time, which takes place in a few days and when its aromatic expression is highest.

The harvest is carried out in boxes of 10 kg. grapes, following the philosophy of km. 0 for which we have personnel from the Ayala Valley. After cooling in a chamber, the best bunches are selected on the table and poured directly into the shelling machine, without going through any hopper that detracts from their integrity and quality.
