A little disappointed…
I bought these with hopes of finding a great pan that was not so toxic but still no -stick. The pictures might be a little hard to see, but I’ve had these for less than a year and the couple of pan sizes I use the most are putting and chipping along the bottoms and edges, as well as the bottoms looking well wore and almost a rusty color now. I hand wash them (though they have made it in the dishwasher a couple times), I cook with them on a gas stove and I only use silicon or wood utensils. I only use a gentle bamboo sink brush or washcloth to clean them and I also have a water treatment system so our water is conditioned and filtered, not hard. I’m just surprised that a nice name brand pan set can’t even last a year. I absolutely love them in every other capacity… the nonstick works great! Love the pan sizes and the fact that they are less toxic than most other sets… the durability however is questionable.

I was hesitant to buy these at first given reviews here and from other pro cooking sites talking about how ceramic pans tend to start out non-stick but lose it over time. At first, I found the same was true - for the first few months, they were super non-stick - eggs practically flew around the pan. But slowly, things started sticking more - especially eggs. But then I did something amazing - I read the FAQ on the Web site. :-) And it has a simple tip - if things start sticking, use a simple melamine sponge, wipe it several times with hot water. IT WORKS.

Using a simple, cheap melamine sponge about once every week or two, depending on what we've used the pan for that week, keeps it very non-stick. Otherwise, we just wash it with soap and water normally.

GreenPan - include a melamine sponge with every pan AND put a note about this in the box! This is an amazing tip and will avoid the negative reviews some leave.

* Great cooking performance - good browning, good balance of heat sensitivity and performance
* Easy clean up
* Very non stick (don't forget the melamine sponge) - I found that I needed to use the melamine sponge more (e.g. once a week) when cooking at higher heats or with stickier foods and less (every 1-3 weeks) when just using it frequently for things like eggs
* Look great
* Grill pan is great - has now replaced our beloved Griddler for most things
* Nice, sturdy, well-fitting lids
* Good price for what you get - good looking, ceramic non-stick pans with good browning
* Have been using the fry pan for 6 months and it's still non-stick and going strong
* Great handles - comfy and oven-safe
* Oven safe

Cons
* They don't recommend very high heat. Not too much of a con given how well this sautes and browns at medium-high heat
* Somewhat sensitive to heat changes - this is a good or bad thing depending on what you're cooking. Sometimes I prefer a pan with a thicker bottom and slower reaction, other times something with faster reaction like these is great.
* Doesn't include a melamine sponge or directions in the box to use it periodically - in just my experience, this is necessary to keep the pans and the cook happy.

First, WARNING, don't use PAM or other spray on oils. The manufacturer clearly tells you not to. Our daughter has a set, and she used PAM many times before realizing that the non-stick feature was being compromised... Did not work as well. Have you ever cooked scrambled eggs in your stainless steel pans only to have to scrub the baked on egg residue off? Really scrub? With these pans, no scrubbing is needed. In fact, I just rinse the "cool" pan off under real warm water and the egg residue comes right off. Worse case you might have to use a wet soapy sponge, and glide the sponge over the pan. We have a conductive range and these pots and pans work perfectly with it. These pots and pans are truly non-stick. After having these pots and pans for several months they still look brand new.... inside and outside.

I purchased a full set of GreenPan Valencia Pro cookware a year ago, some individual items and a large set. The large set arrived in a box packed intricately, and I found only a couple insignificant chips to the coating from transit. After using the cookware for a year, I would say I’m mostly satisfied. Its nonstick characteristics are holding up well, and it doesn’t seem to suffer from regular dishwasher cleanings using Cascade Platinum. Often the pan can be sprayed with water, wiped dry and stored without any detergent. The bottoms are slightly prone to minor rust if they stay wet, but that hasn’t been a problem for me. The nonstick is very good, and I’m hoping the chemically inert properties are accurately represented as ditching Teflon-coated cookware was the paramount reason for buying these. The exterior coating is also very durable. The thickness of the pans is just enough to be satisfactory. Their light weight and durability allow me to use them when car camping.

I find the slightly concave bottoms are not ideal for a solid surface cooktop since there is reduced heat transfer, but it isn’t a showstopper. On an induction stove, it seems as though the ferrous portion doesn’t quite fully span the bottom on some pans so they don’t heat as fully or evenly as they might otherwise. The most satisfactory heat source for these pans is a gas flame. The rough texture on the bottoms is helpful preventing the pans slipping around on tabletop canister stoves, which I appreciate.

Another issue is with the lids. They let steam/condensation escape through the seam between the glass and the stainless-steel surround rim which causes water to pool on the lid and eventually dribble onto whatever cooktop you are using even when just simmering. You learn to lift the lid above the pan so it can drip all this water into the pan. And the handles get very hot fairly quickly, so you have to use a hot pad.

Overall, I’m happy with this GreenPan Valencia Pro cookware and for the money, I’d buy it again and recommend it.

These pans are the best pans I’ve ever had. Best for easy clean up …no scrubbing needed. Heats evenly and sits level on my electric ceramic stove top. Cooks evenly. Goes in the dishwasher and comes out clean. I’m in love with these pans after about a month of use.

I have owned these pots/pans for a year now and I’m in the miserable process of trying to return them. I have BABIED these pots and pans-they’ve never been in the dishwasher or seen a metal utensil. I never use high heat or cooking spray and yet all of the nonstick coating has stopped working and the pots are all chipped from the metal lids that come with the set. Amazon made an exception to return them with a heavy restocking fee. The manufacturer was only willing to replace them if they deemed it a defective product. Of course I need pans that last longer than a year at this price. Keep shopping, this is not the set to drop this amount of cash on!!! What a nightmare!!

I waited a for a month of use to review. If you follow the instructions, don't always use the highest heat setting, use non metal utensils, use the protectors to nest etc this set should last a long time. Very easy to clean, even heat. My only complaint is the pot lids don't have a hole for steam that my old set had so you have to leave the lid tilted on pot to avoid boil over.
