Very sharp and lightweight.
5 out of 5 stars
Very sharp and lightweight.
This knife is highly rated for a reason. It slices through bread like the proverbial hot knife through butter. Some reviews complain that it is too flexible. I did not find this to be true. It's no where near as flexible as a good fillet knife. It may be a little more flexible than some other bread knives but I haven't found it to an issue. You're cutting bread not a joint of beef. The main point is that it is very sharp. A couple swipes and it's through a tall loaf of homemade bread.Japanese steel, full tang, wood handle. It's perfect for cutting bread.

It makes me giggle every time I cut something. Like the guy from the pro kitchen said, it's not for everyone. You'll love it or hate it. I love it. Let's be real, alot of bread knives, because they're serrated, have been pressed into service sawing melons and tough squash. If you're one of the melon people... These aren't the droids you're looking for. There's nothing here to see. Move along. (check out the Dexter-Russell)

I think we're alone now. I can tell you, this blade is a joy to cut with. I buy loaf bread and give it away to the neighbors sliced just for fun. Featherlite and easy to use. (on the hard crusts start with a 'draw' stroke) Beautiful in it's simplicity. No hollow grind or offset grip. No double bevel serrations or fancy tip. Just well crafted simplicity perfect for it's purpose.

This blade is Sharp. I'm a sharpener. 3rd generation. I'm generally not a fan of serrated edges but this one came with a truly Sharp factory edge. After 5 hard loaves and and 2 soft, along with a couple dozen ciabattas and bolillos, I put it under the lens. No burrs, no chips, no rolling. Just a good sharp single bevel edge. We should treat serrated edges like non-stick frying pans, when they're worn out Throw Them Away. I'm going to be heart broke when this beauty of a blade goes dull. But there are reports of years of use and still cutting like the day it was new.

After the reviews about how flexible this blade is I expected something like the the fillet knives we made from bandsaw blades back in the apprentice days or maybe like the whipstick swords https://www.amazon.com/Brushking-Christmas-Shearing-Knives-16/dp/B00KWFHKFG/ref=sr_1_3?crid=13JL8A3DRIAFO&keywords=christmas%2Btree%2Bknife&qid=1650948046&sprefix=christmas%2Btree%2Bknife%2Caps%2C254&sr=8-3&th=1 we trimmed trees with. Not true. This blade has a firm spine. Stiff for it's size. Stays straight in it's intended uses.

I have more expensive knives. I have cooler knives. I have sharper knives. But none of them make me laugh out loud like this bread knife does.

And it's a Tojiro. For $22. Life is good.

This knife is awesome! Slices through sourdough in two strokes with very little crumb left on the board. The handle is smooth and comfortable. The overall weight of the knife is nicely balanced. I’ve had some expensive, name brand knives and this one beats them all!

7 year review: This knife lived through the mad Covid years, attacking tirelessly an endless line of beautifully crafted sourdough loaves, sometimes 4 loaves in a week!. This lightweight, sleek, sharp, easy to use, ultra functional and very very beautiful knife is a prized possession ….
It deserves a pedestal in MoMA.
Below is my original review written 7 years ago:
Absolutely wonderful knife. Perfect match for a very difficult to slice bread. No knead 1.5 kg loaf! The bread is difficult to cut because not only it is massive but it also has an impossibly fine "glass" covering on top and an extra thick crunchy crust at the bottom. I have used several expensive knives to cut this bread and have been frustrated because the slices I obtained were hack jobs at best. Glass destroyed, middles pulled and bottom crust deshaped beyond salvage. This knife, does a perfect job of delivering consistently uniform slices - effortlessly. The sharp serrated edge leaves hardly any crumbs from the glass, slides through the vast middle and finishes the bottom crust with a calligraphic flourish. The mesmerizing action is amazing, very effective and highly satisfying.
6 MONTHS ON: After perfectly slicing 20 loaves This Tojiro is going strong. To have it ready for the job, respect the knife as you would a fine instrument. To keep the knife (and fingers) safe in the drawer of less frequently used implements, I have reused the flimsy container after reinforcing critical corners with small pieces of heavy duct tape on the outside, and sticking a piece of folded aluminum foil where the knife point would touch in the inside. The store hanging tab now works as a handy pull tab to slide the knife compartment out of the clear sleeve.

This a a great bread knife. It’s sharp, easy to handle, lights comfortable, and looks good. A knife with a nice wood handle looks so much better than comparable knife’s with plastic handles.

As soon as I used this, I threw out all my other bread knives. It's effortless, and you can slice even coarse artisanal bread into paper thin slices (not that I'd want to). I'll probably buy a second one at some point for when this one's in the dishwasher.

5.0 out of 5 stars Top- Messer
Reviewed in Germany on May 4, 2021

Reviewed in the United Kingdom on April 22, 2021
It's very, very sharp! I always struggle to get thin slices of bread for sandwiches but with this one it was so easy, you don't even have to apply much force at all.
Also used it for leveling cakes and it was great for that as well.
Really happy with it so far.

Highly functional and smart looking bread knife. The blade was pleasantly longer than I expected, which is a great design feature as it makes slicing so much more efficient and easier. Very pleased with this purchase - great function and quality for an excellent price. Super fast delivery too! Very impressive!
