I bought this for making gravy from baking pan drippings. It’s flat design really makes the task much more efficient than a balloon whisk.A cooking show demonstrated that the most effective way to use a whisk is to use a flat, right-to-left (back and forth) motion, rather than a circular motion. For this flat whisk, I think this is true for shallow amounts of liquid in a large flat pan, such as making gravy from baking pan drippings, and making roux in a skillet.I really love the size of this whisk, 10” total length (whisk spans about 6”, handle 4”). It is easy to handle and lightweight too. Keep in mind though, because the whisk wires are so lightweight, the balance tips to the much heavier handle. I turn it face-down along rim of a small dish or bowl after using to avoid it tipping and splashing stuff all over.The only suggestion I would make is to modify the handle from round to slightly oval so it is less slippery.
