💡 New research from the UK's Royal Agricultural University has shown how using by-products from farming could scale up cell-based meat production and bring down costs 🤝 The report, titled ‘Culture Clash? What cultured meat could mean for UK farming’, explores how scientists and companies developing cell-based meat could find “common cause” with farmers 👩🌾 Chair in rural policy and strategy at the #RAU, Tom MacMillan, led the study. He said: “The farmers who spoke to us for this study had lots of concerns about the technology but, for the most part, had many bigger challenges on their plates. Some were also interested in its opportunities, from supplying raw materials to even producing it on their farms.” 🌉 “Building bridges with farmers is certainly in the cultured meat companies’ interests, as some are starting to see. 🔬 Scientists at Yonsei University in Seoul, South Korea, have discovered that a gelatine-based hydrogel can help improve the flavour and aroma of #cellbased meat. One key component of the taste of cooked conventional meat is the Maillard reaction, named after French chemist Louis Camille Maillard who discovered that unique flavours are created in cooked food at between 140 and 165°C.

🧫🤝 Singapore-based cultured seafood firm Umami Bioworks has partnered with two Indian organisations in a bid to boost R&D and reach commercial-scale production. Umami Bioworks will team up with IKP Knowledge Park’s newly established Centre for Smart Protein and Sustainable Material Innovation in Bengaluru, India. The centre is designed to operate 24 hours a day and is expected to support up to 20 fermentation, #plantbased and #cellbased meat and seafood start-ups.
