Before the end of term, The Unicorn School hosted their first charity meal production with staff, parents and pupils. Together, they made apple and raspberry crumbles, with 95% of the dish made from surplus ingredients. These 200 meals were delivered to City Harvest in Acton, ensuring. A big thank you to everyone involved in making a difference!

Yesterday marked the final day of our summer masterclasses, wrapping up with our Healthy Eating Masterclass with a gluten-free focus. Led by our Director of Nutrition, Christine, and Nutritionist, Lottie, this session highlighted the importance of healthy, inclusive snacking. The group created delicious GF lemon and blueberry oat muffins, apricot flapjacks, GF cheese & herb scones and finished with vegan chocolate orange pots. Things got competitive in today's Masterclass, Fine Dining. Orchestrated by Group Culinary Director, Gavin Young, today's class put our group of talented apprentices and chefs in to teams, with a goal of creating two dishes to showcase for the class. Starting with a demonstration and explanation by Gavin, it was up to the teams to decide what they were going to create, with a whole counter full of fresh produce all the way from bones to herbs to veg. Our team of experienced chefs were on hand to help the groups with their ideas, ensuring that all groups could be free to create as much as they would like. Today we held our North & Scotland Road Show, and what an incredible event it was! Our culinary team put on an amazing showcase of food offerings, ranging from delicious breakfast options and snacks to themed day lunches for both schools and B&I. It was great to have fantastic supplier support from some of our suppliers: Mozzo Coffee, Eat Curious and Vegetarian Express. The event was buzzing with interaction as our location managers from different areas came together, sharing insights and ideas. We also had key presentations on Health & Safety, our sustainability initiatives with Planet Mark and updates from our Head of Sales and UK Managing Director. Yesterday featured our second Chef Development Masterclass, following on nicely from the previous day with the Entremet and Patisserie Masterclass. Lead by Head of Apprentices & Chef Development, Mary Ann, Development Chef, Justin and Relief Chef, Michael, the attendees had a go at making many different types of patisserie, either learning new skills or getting the time to perfect the skills they already possess. Carefully designed to match the national apprenticeship curriculum requirements, these classes will continue to ensure top-notch training to our chef teams and apprentices.
