  • ½ spaghetti squash, seeds removed
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • ½ teaspoon red pepper flakes
  • 4 oz shrimp (115 g), peeled and deveined
  • ¾ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 1 lemon, zested
  • 1 lemon, juiced
  • 2 tablespoons finely chopped fresh parsley

Preparation

  1. Microwave squash on high power until tender, about 10 minutes. Pull the flesh of the squash with two forks into spaghetti-like strands and discard the skin.
