The pan is glowingly reviewed on kitchen round-ups across the web for a reason: the brand, which has been around since the 1970s (made in the USA), knows cookware. This model is 12 inches, durable, made with two layers of stainless steel, and has “three-ply” construction for even heat distribution and retention. “Ideal to deglaze sauces,” according to the brand in chefspeak. All of All-Clad’s cookware is oven and broiler-safe up to 600 degrees, which is almost unheard of; it’s also compatible with any stovetop, including induction.

Reviewers who are more kitchen-literate than the air fryer-prone of us say the pan creates an especially good “fond” (the browned bits that get stuck to the bottom of a pan). That makes it great for sauces, veggies, and anything you want to toss in and roll in some fat (depending on who you ask, that’s everything). And if you’re deciding between going nonstick or stainless steel, the benefit of stainless steel is that it’s amenable to steel-wool scrubbing (like seeks like, etc).
