Pinkster Gin Jam uses gin-soaked raspberries which are left over from making Pinkster Gin. This mildly alcoholic jam is ideal for scones, toast, cakes or as a cocktail ingredient.
Pinkster Gin was created in 2013 by Stephen Marsh, who was searching for a sugar-free alternative to beer and wine. A keen forager and maker of sloe liqueurs and other concoctions, he turned his attention to gin and started experimenting at home, mashing assorted fruits with different spirit strengths. Soon finding that the raspberries delivered the best flavour and now grown locally to their rural Cambridgeshire HQ. In the interests of sustainability they recycle the raspberries, albeit slightly intoxicated, as Boozy Berries, Gin Jam, and Pinkster Royale.
Ingredients: Sugar, Raspberries(50%), Pinkster Gin (5%). Prepared with 50g of fruit per 100g, total sugar content 60g per 100g.
