MEET THE TEAM: Sebastião Coutinho 1. How long have you been working for KABUKI Lisboa? Since November 2021, nearly two months before the grand opening! 2. If I were a dish from our menu, which one would you be and why? I would be Usuzukuri Carabinero because this dish is full of technique, flavour, and it is fun to eat. 3. Share a memorable guest interaction or a funny behind-the-scenes moment? One day at the sushi bar, I showed a customer a carefully cured yolk that had been aging for three weeks. It was a test for a new Kagoshima nigiri. To my surprise, the customer, without hesitation, took the yolk and bit it in half! An unexpected episode that made us laugh. 4. How would you describe KABUKI Lisboa to a stranger? An exclusive restaurant where each visit is an unforgettable experience. Here, we break the formality of fine dining to offer a gastronomic journey that's both simple and rich. I always tell our guests, "If I weren't part of the team, I'd come here for dinner!" 5. What's a non-work-related passion or hobby? Traveling is my passion outside of work. Recently, I spent two weeks in Japan, getting to know the culture, meeting incredible people in the restaurant industry, and gathering new ideas to bring back to KABUKI Lisboa. #MeetTheTeam #Chef #KABUKILisboa
