Bacon Dip

* ¼ tsp. white pepper

* ¼ tsp. red pepper chili flakes

* 1 package bacon bits – about 4 oz – reserve 1 tbsp. for garnish

* 8 oz. lite sour cream or plain yogurt

* 8 oz. mayonnaise

Combine the sour cream and mayonnaise thoroughly. Add the pepper and chili flakes, mix and then add the bacon bits. Put into a container in the refrigerator to chill for a couple of hours so the flavors can marry. Serve in a dish or hollow out a bread boule and use the bread pieces for dipping. Or take a head of iceberg lettuce, slice across the bottom where the core is slightly to make flat. Hollow out the middle and reserve the shredded lettuce for another platter’s garnish. Pour in dip, sprinkle remaining bacon bits on top. Serve with your favorite chips.

Grilled Chicken Wings

* Large whole chicken wings (packages of 8 – 10, as many as you want to grill)

* Tony Chachere’s Creole Seasoning or your favorite seasoning

Wash and pat dry wings. Sprinkle with the seasoning. Grill on each side until nice and crispy. The seasoning makes the skin crispy and crunchy.

Chicken and Vegetable Soup

* 2 shallots, chopped

* 3 – 4 cloves garlic, chopped

* Extra virgin olive oil

* ¾ package of washed kale

* 1 cup chopped baby carrots, about ¼ inch width

* 1 can organic corn, rinsed and drained

* 1 can organic navy beans, rinsed and drained

* 1 shreded whole roasted chicken, skin removed

* 1 cup cooked brown rice or al dente pasta

* 1 or 2 boxes of low sodium chicken broth

* ¼ cup fresh dill, chopped

* ½ tsp of onion powder

* ½ tsp of garlic powder

Saute the shallots and garlic in a tablespoon or two of olive oil in a slow cooker. Add the kale, some chicken stock and cover, simmer until wilted, for about 10 minutes. You may want to add the kale in portions as it will cook down quickly. and add more chicken stock as needed; you do not want this to evaporate and burn. Add the corn, carrots, navy beans, chicken and rice. Add rest of the box of chicken stock. Stir. Add the fresh dill, onion powder and garlic powder, stir, bring to boil and then simmer to heat through. Leave on a low heat on the stove or in the slow cooker.
