Jan. 11 – Tricia Garofalo and Joe Covello, the vice president of United Hoisting and Scaffolding Corp., were destined for each other – and a wedding in Mexico. Along with 52 friends and family members, the couple left their Staten Island home for the Azul Beach Resort in Puerto Morales, where they tied the knot on the beach. “It was perfect,” says Garofalo, a substitute teacher currently working toward her masters in education. “The only thing missing was my mom, but she was there in spirit.” In commemoration, the bride lit a memorial candle and also included a picture in her bouquet.
