Il Consorzio di Tutela del Prosecco DOC è l'ente riconosciuto dal Ministero delle Politiche Agricole a svolgere attività di promozione, valorizzazione e tutela a favore della Denominazione di Origine Controllata Prosecco. È stato costituito il 19 novembre 2009, pochi mesi dopo il riconoscimento della Denominazione di Origine Controllata Prosecco, avvenuto il 17 luglio del 2009. Il Consorzio associa in modo volontario le diverse categorie di produttori - i viticoltori, i vinificatori e le case spumantistiche - ed ha come obiettivi il miglioramento e lo sviluppo della Denominazione, la realizzazione di azioni promozionali e di valorizzazione, la salvaguardia e tutela della denominazione in Italia e all'estero e il rispetto delle regole previste dal Disciplinare di produzione (https://www.prosecco.wine/it/disciplinare). Il Consorzio non svolge attività commerciale. Prosecco DOC è un’eccellenza italiana, espressione di un territorio ben definito, che si estende tra Veneto e Friuli-Venezia Giulia, ricco di tradizione e con un clima favorevole che regala all’uva Glera grande eleganza, equilibrio e un fascino contemporaneo. Il Consorzio di Tutela protegge e promuove l’unicità di questo vino, bandiera nel mondo dello stile di vita italiano. Si è svolta lunedi 1 Luglio presso la sede del Consorzio di Tutela della DOC Prosecco, a Treviso, la riunione di avvio del progetto “MORE - Micro Organismi per il Risparmio energetico in Enologia”, finanziato dal Bando a Cascata iNest, nell’ambito dello spoke 7. Il progetto, che terminerà ad Agosto 2025, conta 11 partner. Le 9 aziende coinvolte hanno sede operativa in 4 diverse province di Veneto e Friuli-Venezia Giulia (TV, VE, VR e PN). Il coordinamento del Progetto è in capo al CREA, Ente di ricerca dedicato alle filiere agroalimentari vigilato dal MASAF, con il suo Centro di Ricerca per la Viticoltura e l’Enologia di Conegliano (TV). Accanto al CREA si avrà la partecipazione scientifica dell’Università degli Studi di Milano. Lo scopo di questa proposta progettuale è duplice: in primo luogo, valutare l'impatto della gestione della temperatura (combinata con la scelta di lieviti specifici) sul risparmio energetico ottenibile durante la presa di spuma, evitando refrigerazioni non necessarie. Sarà così indagata, tramite prove comparative su scala industriale, una fase della vinificazione, specifica per i vini spumanti: la seconda fermentazione in autoclave. In secondo luogo, si mira ad esplorare l'applicabilità di protocolli innovativi di gestione della presa di spuma, elaborati e verificati durante le prime fasi del progetto: se ne stimeranno così gli impatti sul risparmio energetico potenziale in un insieme di realtà produttive del Triveneto (area di produzione del Prosecco DOC). Last month, a new president was appointed for the Prosecco DOC Consortium as well as three vice presidents and new members of the Presidential Committee. Giancarlo Guidolin, President of Cantina Viticoltori Ponte and Council member of the Consortium since its founding, will lead the Prosecco DOC Denomination for the next three years. He will be supported by three Vice Presidents: Alessandro Botter, Giangiacomo Gallarati Scotti Bonaldi, and Mattia Mattiuzzo. "Our priorities aligned with the expectations of the entire supply chain, including grape growers and bottlers who have contributed to the success of this denomination, continue to be: maintaining production quality, ensuring sustainability, and focusing on consumers and the local communities to which we are deeply connected." said Guidolin.
