enrico marmo, executive chef at Balzi Rossi in Ventimiglia, will join our corporate chefs, Rocco Seminara and Manon Santini. Honored with Gambero Rosso 's Italian Tradition Award in 2023, Chef marmo has collaborated with renowned Michelin-starred establishments, including Cracco, Enoteca in Canale, and Osteria Arborina, where he earned his first Michelin star.
Inspired by traditional family recipes passed down by his two grandmothers, both named Irma, Chef marmo delivers a cuisine that emphasizes the true essence of ingredients with bold and distinctive flavours. He believes it is important to enhance them with a limited number of steps.
