Beets and yogurt? Heck yes. Savoury yogurt is a definite ‘thing’. Bon Appetit said so, so it must be so. And I couldn’t be happier because this simple beet yogurt with walnuts is a simple 3 minute meal that feels so satisfying.

I have to admit that sweet breakfasts are not my natural habitat. As a kid, I wouldn’t even eat pancakes, waffles, or French toast! Odd, but 100% true. This dietitian has always been, ahem, unique.

And while I have absolutely warmed to the delights of pancakes, waffles and fruity smoothies, I still have a very strong love of savoury breakfasts, like this wonderful beet yogurt with walnuts. It’s one of those plant-based recipes that somehow feels a bit special – maybe even fancy? – even though it only takes about 3 minutes to make.

It’s a great way to use up leftover roasted beets…and you don’t have to only eat it at breakfast. It makes a great simple lunch too, perhaps with a slice of 100% rye sourdough to further enhance the Scandi-vibes.

Sound good? Then gather your ingredients!

  • Cooked beets: use up your leftover roasted beets, or buy some pre-cooked beets at the store!
  • Thick,unsweetened vegan yogurt: if you have a Greek-style yogurt where you live, grab that. In the US, Forager, Kite Hill and Lavva are all great. So far, my favourite yogurt in Canada is Yoggu brand.
  • Walnuts: mineral rich, with some omega 3 fatty acids, their earthy flavour pairs beautifully with beets
  • Caraway seeds: I love this mild, aromatic spice with beets!

Ingredients

  • 1 cup roasted beets , finely chopped, or precooked beets
  • ½ cup Greek-style vegan yogurt
  • ¼ cup walnut halves, chopped
  • teaspoon caraway seeds, lightly crushed
  • flaky salt, to taste
  • freshly cracked pepper, to taste

Instructions 

  • Stir beets, yogurt and caraway seeds together and season to taste. You can eat this right away but flavours will improve as it sits…you can even make this the night before!
  • Top with walnut halves and serve with a slice of whole grain toast if desired.
